To be honest, the first time I let my radishes go to seed, I didn't know that seed pods were edible. Now that I know, it's hard to not let at least one or two produce pods just so we can eat some. Anyone who has grown radishes for very many years knows that if you leave them in the ground long enough, they start to produce flowers. Most people pull them well before that happens. But if you let them grow, they can get very tall and produce quite a few flowers. Each one of those flowers will end up forming a seed pod. If you let the seed pods dry out, they will produce seeds that you can plant the next year. But if you pick them while they are plump and crisp, they are very good to eat. When they are plump and firm, radish seed pods are crisp and crunchy with a mild radish flavor. Then there is a hint of spiciness that is pleasant and not overwhelming like some hotter radishes can be. We use radish seed pods much like we use sugar snap peas. They can be used in a stir fry, eaten fresh in a salad, or eaten with a dip like you would with any other vegetable.
