Remove skin from red onion and slice thinly (using either a mandoline or a knife). 2. Place onions inside a glass jar. Fill half with apple cider vinegar and half with red wine vinegar (substitute any kind of vinegar you prefer). Add peppercorns and salt (whole). Shake jar. Refrigerate for at least 20 minutes, preferably 3-5 days. Shake everyday. Enjoy!
